1.25kg Carrots Griddle pan

50g White Miso paste Juicer

3 egg whites

Sugar

Method

  • Heat a griddle pan on medium high heat
  • Char carrots on griddle until scorch lines appear
  • Pass carrots through a juicer (We are looking to obtain 500g juice)
  • In a pot, bring the 500g carrot juice and 50g white miso to a boil, then turn the heat down so the mixture is just simmering
  • In a separate bowl whisk the 3 egg whites for 30 seconds until uniform, then mix into the simmering carrot mixture (The egg whites will form a raft which will help clarify the liquid)
  • After 5 minutes on a low simmer, pass the mixture through a coffee filter
  • Weigh the clarified carrot and miso juice and mix with equal weight of sugar while still warm, ensuring that the sugar is dissolved
  • Store in sterilised bottles and store in the fridge for up to 6 weeks
