Taste Spring at German Gymnasium: 2025 White Asparagus Menu Unveiled

From April 23rd, German Gymnasium in King’s Cross will serve its hotly anticipated annual Weisser Spargel menu.

The limited-edition menu is only available for one month whilst German white asparagus is in season. This highly in-demand menu is a true treat not just for Germans missing home, but also for Londoners wanting to try authentic German foods.

German Gymnasium’s Executive Chef, Alex Thiel, a seasoned culinary chef hailing from Germany, takes great pride in his annual Weisser Spargel menu, and looks forward to the season each year as an opportunity to showcase very classic and traditional German dishes. Thiel is on the phone daily to suppliers, asking for updates on when German Gymnasium will receive the 2025 harvest of this cherished German delicacy.

Thiel says “every year, our Weisser Spargel menu is growing in popularity, and it’s been such a joy to see. Those dishes become our bestsellers during asparagus season, whether guests came in specifically for the menu or not.” At German Gymnasium, each stalk is peeled by hand by Alex, and Alex only to ensure it reveals its delicate flavour and texture.

This menu is his tribute to a cherished tradition, inviting London to experience the true essence of a German spring. German Gymnasium’s Spring White Asparagus menu features traditional dishes, including:

  • Spargelcremesuppe (V): a delicate, creamy white asparagus soup.
  • Spargelsalat (VG): an asparagus salad dancing with textures and tastes; where tender white and green spears, fresh fennel, fragrant dried tomatoes, peppery radish, lamb’s lettuce and sweet green peas, sing with a zesty mustard dressing.
  • Spargel mit Hollandaise (V): the definitive dish, combining white asparagus spears with piquant hollandaise and buttery new potatoes. 
  • Berliner Buletten: hearty, pan-fried veal dumplings mingle magnificently with plump white asparagus, cherry tomatoes and fresh green peas.
  • Lammkotelett: the combination of tender lamb cutlet, white and green asparagus, wild garlic and potato puree is spring on a plate.
  • Spargel mit gebeiztem Lachs: is a celebration of white asparagus, accompanied by house cured salmon, a citrus sharp hollandaise and dainty new potatoes.  

Celebrate the fleeting white asparagus season at German Gymnasium this Spring. Each dish is a love letter to this seasonal delicacy that transcends borders and invites Londoners on a limited-time journey into the heart of German springtime, one perfectly peeled stalk at a time. About Executive Chef Alexander Thiel

Alexander Thiel, a seasoned culinary chef hailing from Germany, has embarked on a mission to reshape London’s perception of German cuisine as the Executive Chef at German Gymnasium. His culinary journey, deeply rooted in his upbringing, has taken him from Germany’s rural landscapes to London’s bustling urban scene. Alex lived in Berlin from the age of 7 but each summer visiting his grandfather in rural Thurgine, who he cites as the most influential person on his current cooking style. This passion for food fuels his mission to educate and delight diners in London and beyond.

Chef Thiel has crafted a remarkable career in the world of hospitality working across the world in destinations such as Scotland, Switzerland, Washington D.C, as well as Lake Bodensee and Hamburg in Germany. Earning his culinary stripes as a successful restaurateur in Berlin, with notable roles as Head Chef at Dressler, Co-Owner at Sachs, and the subsequent launch of his own acclaimed establishment, Thiel’s.

In 2013, Chef Thiel embarked on a new adventure in London, making his mark in the capital at legendary venues such as Beaufort and Barrafina. London now has the privilege of experiencing the depth and diversity of German cuisine under his expert guidance at German Gymnasium.

Beyond the kitchen, Chef Thiel’s humanitarian endeavours in Ethiopia (where he established a chicken farm in Lalibela) reflect his compassion and dedication to making a difference. Beyond the kitchen, Chef Thiel likes to travel. After making friends in Ethiopia, he decided to support the local community by investing in and establishing a chicken farm in Lalibela. Over-run by civil war in 2021, he continued to support the people behind the venture by rebuilding in Bahir Dhar, with the same family who had essentially become refugees. 

As Executive Chef at German Gymnasium, Chef Thiel presents a contemporary voice for German cuisine, promising a dining experience that transcends borders and celebrates the richness of Germany’s culinary heritage: “Arriving in London 11 years ago, what I liked the most was the melting pot of global cuisines.
