Get ready to fire up the grill with this indulgent BBQ Raclette Steak Sub—stacked with medium-rare barbecued ribeye steak, golden fries, oozing Raclette cheese, and a punchy chimichurri sauce, all packed into a crusty ciabatta. It’s the ultimate al fresco feast, perfect as the weather warms or to celebrate National BBQ Week (26 May–1 June).
According to a recent survey by Emmi UK, the Swiss cheese experts, a third of Brits (33%) say they’ll be enjoying hot melted cheeses like fondue and Raclette over the coming months. That number jumps to over half (59%) of 25–34-year-olds—thanks to the sociable, shareable nature of dishes like this one.
Gone are the days of lifeless plastic cheese slices. Brits are embracing rich, melty cheeses for their flavour and versatility—think Raclette over burgers, hot dogs, or even roasted new potatoes. And now, this steak sub is joining the ranks.
Ready to recreate it at home? Emmi, Switzerland’s premium dairy producer, shares how to build this flavour-packed sub, layer by irresistible layer.
Ingredients:
For the Chimichurri sauce
· ¼ teaspoon parsley
· ¼ teaspoon Chilli flakes
· 1 Garlic clove
· 3 tablespoons Olive oil
· 1 teaspoon red wine vinegar
For the Sub
· 1 Ciabatta loaf
· 200g of fries (enough for 2 people)
· 4 Slices of Emmi Raclette
· 1 tbsp Mayonnaise
· 1 Ribeye steak
· Salt and pepper
· 1 Red onion cut into rings
· 1 teaspoon of olive oil
Method:
- Light your BBQ and remove steak from the fridge
- Make your Chimichurri sauce by simply chopping all the sauce ingredients together on a board, adding just enough olive oil so that it drops off a spoon. Leave to one side.
- Put your fries into the airfryer/oven to cook (check pack instructions)
- Whilst your fries are cooking, put red onions in a frying pan and cook for 10 to 15 minutes stirring occasionally.
- Meanwhile, season your steak with salt and pepper and cook on the BBQ for about 2 minutes either side (about 4 in total) for medium rare. Leave to rest for 5 minutes and then slice.
- Slice your Ciabatta down the middle and spread mayonnaise on one side. Top with your softened onions then thin slices of steak. Add your fries and chimichurri sauce, then top with melted Raclette cheese. Slice into strips.
