Easy and Healthy BBQ Recipes

The warmer weather is (hopefully) approaching and with that comes BBQ season! Everybody loves BBQ, it’s a great chance to celebrate the summer!

Below are some delicious ideas for side salads and ways to level up the standard burger on the grill, all using tasty and nutritious products from The Groovy Food Company.

BBQ Rainbow Beef Salad

INGREDIENTS

2 x 250g sirloin steaks, fat trimmed⁠

thumb-sized piece ginger, grated⁠

1 garlic clove, grated⁠

2 limes, juiced⁠

2 tbsp The Groovy Food Company Organic Extra Virgin Olive Oil Cooking Spray ⁠

1 tbsp low-salt soy sauce⁠

3 red bird’s eye chillies, finely chopped⁠

4 small Gem lettuces⁠

12 radishes, thinly sliced⁠

3 carrots, peeled and sliced⁠

½ cucumber, cut into ribbons using a peeler⁠

3 spring onions, sliced⁠

1 large avocado, sliced or diced ⁠

½ tbsp mixed sesame seeds⁠

METHOD ⁠

1. Let the steak rest for 1 hour out of the fridge before cooking. Before you start, make the salad dressing by mixing together the garlic, ginger, soy sauce, lime juice, olive oil spray and chopped chillies in a bowl.⁠

2. Put the steaks on the barbecue and cook for 3 mins on each side (this should give you medium rare steaks, so you can adjust cooking time to suit your preferences). You can also pan fry your steaks if you’re not having a BBQ! Once cooked, cover and rest for 5 mins.⁠

3. Place the vegetables and avocado on a sharing plate or in a large bowl, slice the steaks and lay on top of the salad. Drizzle the dressing and any resting juices over the salad and garnish with the sesame seeds and any leftover chillies.⁠

Hot Agave Burger 

INGREDIENTS

450g minced beef (we use 7% fat)⁠

1 large egg⁠

25g finely diced onion⁠

25g dried breadcrumbs⁠

1 tbsp Worcestershire sauce⁠

1 or 2 finely chopped garlic cloves⁠

1/2 tsp salt⁠

1/4 tsp pepper⁠

4 burger buns (we like the brioche ones!)⁠

4 washed lettuce leaves⁠

1 ripe tomato, thinly sliced⁠

4 slices red onion⁠

⁠The Groovy Food Company Hot Agave Nectar ⁠

Ketchup ⁠

Mayo ⁠

METHOD ⁠

1. Mix the beef, egg, breadcrumbs, diced onion, Worcestershire sauce, salt, pepper and garlic in a bowl. Divide into 4 equal portions and shape into a patty. ⁠

2. Lay the patties on the BBQ grill or gas grill and cook for around 8 mins, turning halfway through until browned on both sides.⁠

3. Slice the burger buns and place face down on the grill for 30 seconds to lightly toast. Add your choice of condiments, the lettuce, tomato and burger patty and onion onto the bun, and finish off with a drizzle of delicious Hot Agave before putting the top bun on. ⁠

4. Tuck in and enjoy!⁠

Grilled Peach Salad 

INGREDIENTS 

2 peaches, ripe but firm, destoned and halved

The Groovy Food Company Organic Extra Virgin Olive Oil Cooking Spray

2 handfuls rocket

6 slices of your fave serrano ham

1 ball fresh burrata

a small bunch basil

2 tbsp of toasted pine nuts

Crusty bread to serve 

Dressing

3 tbsp The Groovy Food Company Organic Extra Virgin Olive Oil Cooking Spray

2 tbsp white balsamic vinegar

1 tsp runny honey

1finely chopped red chilli

½ a clove garlic

METHOD

1. First, make the dressing by whisking together the Olive Oil Cooking Spray, vinegar and honey in a bowl before stirring in the chilli and garlic. Leave to rest while you prepare the rest.

2. Heat a griddle pan and brush the peach halves with the Olive Oil Cooking Spray, then griddle until caramelised on the surface.

3. Scatter a platter or large bowl with the rocket, then place the serrano ham on top. Place the peaches on the platter and pour the dressing over everything. Scatter over the basil and pine nuts and serve alongside the crusty bread.
